When I’m having one of those/these days, when nothing is going right, baking something sweet usually fixes things. I find it comforting knowing that if I measure everything correctly, follow the directions, and compile as instructed, the result will be exactly what I want (I have to say, I wish life was like that).
Lemon meringue is one of my most favorite desserts– probably because it’s one of my Nanna’s signatures and I practically grew up on it (probably because I request it every single time I visit). The key is using real lemons, adding tons of fluffy goodness, and having an extra flaky crust (i.e., using lots of butter). It’s not the quickest recipe, but definitely worth it.
