WHite CHocolate GIngersnaps & LAvander SAlt

What could be better than white chocolate and ginger? Not much I don’t think. I took these babies to a New Year’s Eve party last week and I got asked for the recipe more than once. They’re amazingly soft and chewy, the combination of flavors is unexpected, and they look quite, well, cute. I paired them with a fig, walnut, balsamic vinegar, and marscapone cheese compote and felt like quite the sugar fairy. Except for when I sprinkled the cookies with lavender salt– which I highly recommend.
