CAuliflower SOup WIth WHite TRuffle OIl

Last night I was craving something comfort food-y. It had been a long day, full of a gazillion meetings, and no time to eat (except for the 4 pm bag of peanut M&Ms of course).

I had been meaning to make this recipe for a while because I firmly believe that truffle oil makes everything better. This soup is no exception. It took all of thirty minutes to make and was the perfect end to a hectic day (along with a semi-watched episode of the Bachelor).

Note: I may have gone a little crazy “drizzling” the white truffle oil on top, but all the better to dip a crusty french baguette in, right?
