FUdgy MEringue COokies

Last week I felt as if everything was being thrown at me at once, not all of it bad, but still, overwhelming none the less. After re-reading my horoscope twice, I turned to my favorite cookbook– Bon Appetite magazine– and settled on this recipe in an attempt to de-stress. As per usual, focusing on the measuring, stirring, and factory-like process of getting each cookie the same size, felt almost meditative and helped me calm down. Even though they didn’t turn out as fluffy as I would have liked (never make meringue when it rains) I can’t say I really cared.
