Sunday night we gathered in my friend’s garden to celebrate a belated birthday. We sipped on absolutely delicious watermelon mojitos and the evening was topped off with scoops of pistachio Van Leeuwen heaven. It was one of those nights that feels too perfect to be true: strung lights dangled from the branches, I was seated next to a very cute boy who has his own ice cream company, and we laughed so much my stomach hurt (or maybe it was the multiple cupcakes I “sampled”?).

20 torn mint leaves
3 slices of watermelon pureed
12 oz light rum
1/2 cup simple syrup
Crush mint, add melon and liquid. Pour over ice. Sit with friends and enjoy.
