The Golden Egg

A perfect hard-boiled egg my new favorite snack. The key is to buy super-fresh, local, free-range eggs (I get mine at Murray’s Cheese) and to slip them in to boiling water for no more than six minutes. I like mine with a sprinkling of nutty, shredded cheese and drizzled with truffle oil.

  1. Yum! I love eggs, but always have difficulty peeling them! What do you do to get them out of the shell without loosing half of the egg that sticks to the shell?

  2. The fresher the egg the harder it is to peel, so I’d like to know your trick too! My brother has hens so I always have lots of free, organic, free-range eggs at my disposal, but I always use the oldest ones if I’m planning on boiling them.

    • It’s interesting that you find that fresher eggs are harder to peel. I actually find the exact opposite actually. I’ve tried different ways to boil eggs, but I find that bringing the water to a boil, then putting the eggs in (8 min for two eggs), then running cold water over them immediately after is the best way to go about it.
