Aunt Isabella’s Homemade Croutons

My favorite salad in the whole world. Simple, and yet perfect. Just fresh spinach, dried cranberries, goat cheese, and a raspberry-walnut vinaigrette. The pièce de résistance though is the homemade croutons.

Aunt Isabella’s Homemade Croutons


Loaf of good bread
Olive oil
Bacon fat
Spices (specified below)
Parmesan cheese

Instructions (in her words):

“Cut bread in cubes. Dry bead cubes out in a warm oven.

In a fry pan melt a combination of oils: olive oil, butter, bacon grease, etc.
Add seasonings: lots of paprika and any of the following celery salt, oregano, basil, herb de provence, etc.

Toss dry cubes in warm oils and continue to toss until all bread is tinted paprika red.

Sprinkle with Parmesan cheese.

If need be, dry croutons out in the oven again, but often this last drying is not needed.
Keep in an airtight container.
