Winter, i.e., tomato soup and grilled cheese season, officially arrived this weekend. I decided to upgrade my typical recipes with an incredible Valencay goat cheese from Murray’s Cheese and this quick and creamy tomato soup. The toasted paprika makes this meal utterly cozy and perfect for a night in, away from the cold.
Creamy Tomato Soup
2 (15 ounce) cans crushed or diced tomatoes
3 tablespoons tomato paste
1 tablespoon sugar, honey, or maple syrup
1 garlic clove
1 fresh sage leaf
1/4 cup whipping cream
1 T Paprika
Toast paprika in a dry shallow pan. In a blender, combine all of the ingredients and puree. Transfer to a medium pot and heat until steaming (but don’t let it boil!). Drizzle with olive oil.
Enjoy with a glass of red wine and your favorite pjs.
