Someone tweeted that kale is the new Celine, and I have to agree. I’m just as obsessed with this salad as I am with the gray on gray trapeze tote. The first time I tried this nut, cheese, and tamari concoction, my girlfriends and I were at beach. We focused our culinary efforts on burgers and pints of ice cream, but this dish was so delicious it snuck by. Despite that it’s composed of one of the healthiest veggies out there.
Hazelnut, parmesan and kale salad
3 cups of kale torn up, stems taken out
1/2 cup chopped hazelnuts
1/2 grated parmesan
2 T olive oil
1 T wheat-free tamari
1 T rice vinegar
Pour tamari, oil and vinegar into a bowl and toss with the kale. Let it marinate overnight in the fridge. Add nuts and cheese.
Enjoy still sweaty from the gym, watching the Ryan Lochte, on the couch.
