Salted caramel cashew bark


I’m the type of person who reads a recipe, remembers it a month later while at the grocery store and then tries to guess what it called for, inevitably getting twice as things as I needed. Such was the case when I made these spiced nuts. With a pound of cashew leftovers, I decided to make this super easy chocolate bark for cute valentine’s day presents. The caramel gets soft and gooey and the sweetness is perfect with the salty cashews.

Salted Caramel Cashew Bark


1 pound milk chocolate
1/2 cup chopped salted caramels
1/2 chopped salted cashews

Line a baking sheet with parchment paper. Using a double boiler or in a microwave at 50% power, melt the chocolate until smooth. Stir in the chopped caramels and cashews. Pour the mixture onto the pan and spread into an even layer (it won’t cover the whole pan). Sprinkle on some extra chopped caramels and cashews.  Refrigerate the pan for about 30 minutes, or until set. Break the bark into pieces and serve. Store leftovers in an airtight container in the refrigerator.
