With the weather getting warmer (finally!!), it’s time to lighten up. While I might not be totally ready to lose the forgiving layers, I am very beyond ready for some delicious fresh fruits and veggies. What I love about salads is that you just need three great ingredients, a little balsamic and olive oil, and you have yourself a fantastic meal. Here are some combinations that you can’t go wrong with:

Heirloom tomato, fresh fig, and blue cheese

Hazelnut, parmesan and kale 

Grilled shrimp, corn and feta cheese

Cherry tomatos, cucumber and goat cheese

Curry chicken, raisins and spring greens

  1. This looks like a super yummy salad, and so good for you (and me). I am going to have my boyfriend get all of the ingredient’s and bring them over when he come’s this weekend! We can eat healthy for a change!

  2. I like avocado, peach, and red onion with a little bit of lime juice and a sprinkle of roasted pepper flakes. But you are right, balsamic and olive oil and everything is good in the world.
