Thursday my boyfriend and I decided to have some people over to his apartment for dinner. It didn’t leave a lot of time to prepare, so I had to keep things simple. I made single flower arrangements using this trick and picked really easy recipes. Saturday morning I made the cookies and prepared the berry crumble so dessert was completely out of the way (all I had to do was pop the pie dish in the oven). For appetizers I served cheeses and meats, ricotta drizzled with honey and red pepper chili flakes, lots of crackers and toasts, and a pea hummus I made by throwing peas, chickpeas, italian parsley, yogurt and lemon juice in my Vitamix. Dinner was a simple salad, a premade pasta side dish from Dean and Deluca and seared scallops. We asked the guests to bring their favorite cocktail and the meal was complete.
